Is there any way of determining with WPT how antivirus software affects page loading times?

Nope, sorry. There is just too much variability across different providers (and different versions) to the point where it becomes a huge testing matrix. The best answer is that “good” Antivirus software doesn’t have a measurable impact (depending on the amount of javascript and how intrusive the AV is) but the “less good” products can wreak all sorts of havoc and even break things like gzip.
